Objectives

1. To evaluate the efficiency of stabilised chlorine dioxide use in ice for reducing microbial loads on chilled seafood and to determine the keeping quality benefit gained and maladour reduction by storing seafood product in ice which incorporates stabilised chlorine dioxide.
